CORNED BEEF & POTATO NEARLY HASH

2 tbsp olive oil
1/2 lg onion -- fine chopped
1/2 lg carrot -- fine shredded
1 red bell pepper -- capsicum chop finely
2 lb tinned corned beef -- 1kg cubed
Heat oil in a large skillet over medium-high heat; add onion and carrot. Cook, stirring occasionally, until tender, about 5 minutes.
Prepare half a recipe of Potato Nearly . Add to skillet.
Add corned beef to skillet; stir to combine. Cook, pressing down mixture with a spatula, for 15 minutes, or until browned on the bottom. Invert onto a serving plate.
