BEEF STROGANOFF 3 DR. A'S

2 lg onions -- chopped
1/2 lb mushrooms -- 250g sliced
4 oz butter -- 125g
1 1/2 lb steak -- 750g in fine strips
1 dash tarragon
2 tsp dry mustard
1 1/2 tsp Spike
1/2 cup sour cream
1 bay leaf
1 tsp chives
1 tbsp dry sherry

Saute onions and mushrooms in butter (try using less than called for) until soft and golden, and remove to casserole. Brown meat in remaining butter, but do not cook through. Place browned beef in casserole with onion and mushrooms. To remaining juices in same pan, add tarragon, mustard, salt, 1 tablespoon sour cream, and sherry. Mix well, and pour over beef, onions, and mushrooms. Stir all ingredients until well blended. Bury bay leaf in beef and simmer over very low heat for 25 minutes. Remove bay leaf, add remaining sour cream, and mix well. Farnish with cloves. This should be served on top of 1 recipe Noodles (see recipe), shaped into thin noodles.
