BEEF ROLL-UPS IN CREAMY SAUCE

2 lg spring onions -- finely chopped
1/2 cup mushrooms -- finely chopped
1/4 cup grated carrots
3/4 cup pork rinds crushed -- or LC Recipe breadcr
1 egg -- lightly beaten
Black pepper
4 beef fillet steaks -- battened out thinly
2 tbsp olive oil
1 onion -- thinly sliced
2 tsp vegemiteŽ yeast extract spread
1 425 g can vegetable soup -- 14oz
1/4 cup half and half -- 50% water/cream
1 tbsp chopped fresh parsley
1. Combine spring onion, mushrooms carrot, breadcrumbs, egg and black pepper; mix well. Spread a portion of filling on each schnitzel and roll up; secure with toothpicks.
2. Heat oil and saute onion 1-2 minutes; add beef rolls and cook until lightly browned. Remove beef and place in a buttered ovenproof dish.
3. Add to pan, vegemite, soup, half and half and parsley; stir well to blend until boiling and pour over rolls.
4. Bake in a preheated moderate oven 350°F-180°C for 30-40 minutes.
Remove and serve immediately. This is delicious served with cooked vegetables.
