BBQ POCKET BEEF

5 lb trimmed beef -- 2.5k
- MARINADE-
1/2 cup tomato puree
2 tbsp Splenda
1/4 cup vinegar
1/2 cup minced onions
1 tbsp Worcestershire sauce
2 tsp liquid smoke flavoring
1 tsp black pepper
1 bay leaf

Mix all marinade ingredients.
Place meat onto a large piece of heavy-duty foil.
Pour marinade over beef.
Seal foil well.
BBQ/grill for 80 minutes, turning often.
Remove from foil for last 10 minutes
BBQ/grill , turning and basting.
Alternatively. Bake at 325°F-160°C for 2 1/2 - 3 hours; removing foil for last 10 minutes
Serve hot.
