Here's a throw-together casserole that is easy to do, filling, and delicious:
Spray a9x13" - 225x325mm baking dish with pan spray. Dump in one large bag plus one box or small bag of
frozen veggies - your choice. (Broccolli, cauliflower, stir-fry mixes, artichoke hearts,
green beans, whatever.)
Sprinkle over the vegies 1-1.5 lbs of one of the following: cleaned and cooked shrimp
(saladette, medium prawns minus the shells, or even langostinos), bay scallops, canned tuna
or chicken, chopped leftover cooked chicken or turkey. (You can also mix seafoods together,
such as shrimp+scallops.)
Pour on one bottle of Roasted Garlic Alfredo sauce.
Sprinkle top with 1/2 - 1 bag of shredded cheese (I go for the Italian blend or mozzarella
usually).
(optional) If not on induction, you can add a sprinkle of low carb bread crumbs.
Bake at 375F for 30 minutes, or until it's bubbling and the top has started to brown.
