MUSTARD MARINADE

Amount Measure Ingredient -- Preparation Method

2 tbsp dijon mustard
2 tbsp mustard -- whole seed
2 tbsp mustard -- hot german
2 tbsp white vinegar
2 tbsp olive oil
1/4 cup white wine
1 tbsp lemon juice -- juiced
1 shallot -- sliced
ground pepper

Combine all the ingredients in a bowl, add oil last and whisk to emulsify.

Best used for poultry, marinate chicken pieces for 1-3 hours. Can also be used on shellfish, but marinate only 30 minutes or so.
