TWO CHEESE SOUFLE

50 g Double Gloucester cheese -- 2 oz grated
50 g Cheshire cheese -- 2oz grated
3/4 tsp cream
50 g cooked ham -- 2oz finely chopped
50 g pork rinds -- 2 oz crushed
1 tsp Worcestershire sauce
1 pinch mixed spices
Salt and freshly ground black pepper
2 eggs -- separated
Beat together the cheeses, cream, ham, breadcrumbs, Worcestershire sauce and spice.
Season with salt and pepper. Beat the egg yolks into the mixture.
Whisk the egg whites until stiff then gently fold them into the mixture.
Spoon into greased ramekin dishes, stand them on a baking sheet and bake in a preheated oven at 200C/400F/gas mark 6 for about 15 minutes until well risen and golden brown. Serve at once.
