SWEET EGGS

1 1/2 tsp butter
2 eggs
4 tsp splenda -- 2 pkts
2 tbsp cream cheese
1 tsp heavy cream
1/2 tsp vanilla
Melt butter in small skillet (I use my omelet pan).
In a small bowl, mix the 2 eggs with 2 teaspoon - one packet of Splenda.
Pour into frying pan.
DO NOT STIR EGGS. Allow the eggs to set up like an omelet.
In another small bowl mix the cream cheese, heavy cream, vanilla and the
remaining splenda.
When the eggs are set gently spread the cream cheese mixture over the eggs.
(At this point I like to let the whole thing set briefly to allow the cheese
to soften)
Using a spatula roll the egg 'crepe' together like a jelly roll.
