STRAWBERRY AND CREAM CHEESE OMELET

2 lg eggs
2 tbsp heavy cream
1 tbsp strawberries -- sliced thin
2 oz cream cheese -- 60g sm cubes
1 dash salt
Mix eggs, cream and salt in a bowl and pour into a 6" non stick pan that has been sprayed with cooking spray, and has been warmed over a medium
heat.
As eggs begin to set, gently lift up edges and let uncooked eggs run to the bottom.
Once the top looks less glossy and mostly set, spread the strawberries and cream cheese down one side, then fold the unfilled side over.
Turn off heat and cover. Let sit 2-3 minutes to melt cheese before serving.
