SEVEN OAKS OVEN OMELET

1/4 cup butter
18 large eggs
1 cup sour cream -- or softened cream
cheese
1 cup heavy cream
2 tsp salt
1 cup shredded cheddar cheese
1/2 cup shredded Swiss cheese
1/2 cup shredded Monterey jack cheese
1/2 cup chopped green bell pepper -- (optional)
3 green onions -- thinly sliced
(optional)
Heat the butter in a 325°F-160°C oven in a 9x13" - 330x230mm baking dish until melted.
Tilt dish to coat bottom completely with the melted butter.
Beat the eggs, sour cream, cream and salt in large mixing bowl until well blended.
Stir in cheeses, green pepper, and green onion.
Pour the egg mixture into the baking dish.
Bake uncovered until omelet is set but still moist, about 40-45 minutes.
Wrap in heavy duty aluminum foil whole or cut the omelet into 12 squares and wrap them individually.
Freezes well.
To reheat, place wrapped omelet or squares in a 325-degree oven for 15-20 minutes or place the wrapped omelet over a moderately heated grill or low campfire coals for the same amount of time.
