ROUMANIAN OMELETTE WITH HERBS

3 eggs
salt and pepper
1/4 cup yoghurt or sour cream
2 tbsp soy flour
1 tbsp finely chopped fresh tarragon -- sorrel, parsley
or chives
1 oz butter -- 30gr
Beat the eggs lightly with a fork, season to taste with salt and pepper and whisk in the yoghurt or sour cream. Sift the flour into a bowl and lightly stir in the egg mixture and herbs.
Heat half the butter in an omelette pan or a heavy-based frying pan and pour in half the mixture.
Cook over a low heat, moving the omelette around with a fork to prevent it from burning.
When golden brown underneath, turn over and cook the other side.
Slide cooked omelette out onto a warm plate and serve at once topped with a nut of butter.
Cook another omelette in the same manner and serve immediately.
