OVEN BAKED HERB OMELET

Amount Measure Ingredient -- Preparation Method

1 clove garlic
2 tbsp olive oil
16 Basil leaves -- chopped
chopped 10 and 6 for garnish
1 tbsp fresh parsley -- chopped
1 tbsp fresh thyme -- chopped
Salt and pepper to taste
2 tbsp grated Parmesan cheese -- freshly ground
9 eggs
1 cup half and half -- 50% water/milk

Preheat oven to 400°F-200°C.
Chop garlic and mix with olive oil and herbs.
Bake herb mixture approximately 10 minutes.
Beat eggs. Add half and half , salt, pepper and cheese.
Pour over herb mixture.
Gently mix.
Cover with foil and bake approximately 30 minutes in a 11.7" - 290mm Pyrex dish until fluffy.
