GEVULDE OMELET (STUFFED OMELET)

4 eggs
200 grams lean ground beef -- 6-7oz
1/2 large onion
1/4 green pepper
80 grams grated cheese -- 3oz
4 tbsp sherry
50 grams butter -- 1 1/2oz
Salt and pepper
Paprika powder
Tobasco sauce
Worcestershire sauce
4 Tbsp half and half -- 50% water/cream

Peel and chop the onion and dice the green pepper.
Sauté onion and pepper in half the butter.
Add the ground beef and fry it until it is gray and crumbly.
Add salt, pepper, paprika powder, tobasco, and Worchestershire sauce, and the sherry.
Simmer for 5 minutes.
Break the eggs, add the half and half and beat them lightly.
Add salt and pepper for taste.
Cook two omelets in the remaining butter.
Finally, just before ready, add the grated cheese to the beef mixture, spoon it on the omelets, fold them over and serve.
