Amount Measure Ingredient -- Preparation Method

6 eggs
6 egg whites
3 cups bean sprouts
4 stalks celery -- sliced thin
1/2 lg onion -- thin sliced
2 tbsp soy sauce
- Sauce-
1 cup cold water
1 tbsp soy sauce
2 tbsp red wine
1 tsp beef bouillon
1 tbsp corn flour -- or starch

Mix well in a large bowl. If bean sprouts are very long, it is ok to break them up some. Heat oil in a skillet, and add a ladle of egg mixture when hot. Fry until set, turn and fry until golden, remove to a serving platter. Repeat with remaining egg mixture. While frying, make sauce:
Mixsauce ingredients together, and heat until boiling, and thickened. Pour over fried egg patties, and serve.
Variations: Add cooked shrimp, chicken, beef, or pork to the egg mixture
