9 hard-boiled eggs
2 tbsps butter
1 tbsp soy protein Isolate -- or whey
1/4 cup half and half -- 50% cream-water
1 tbsp chopped parsley
salt and pepper
1/2 cup pork rinds
2 sm eggs -- beaten
oil for deep frying
Chop the eggs finely.
Melt the butter in a saucepan. Remove from the heat and stir in the flour.
Return to the heat and cook for one minute over a low heat.
Slowly add the 50/50, stirring constantly. Add the parsley and salt and pepper to taste and cook over a medium heat, stirring constantly, until thickened.
Add the eggs to the white sauce and chill until firm.
Form the egg mixture into croquettes.
Roll in pork rinds then dip in the eggs. Roll in pork rinds again.
Fry in the deep, hot oil until golden brown. Drain on absorbent paper.
