CREAMY OMELET WITH MUSHROOM SAUCE FOR 2

4 eggs
1/4 cup cream
1 pinch cayenne pepper
1/4 cup grated cheddar cheese -- tasty
- MUSHROOM SAUCE-
15 g butter -- 1/2oz
2 shallots -- finely chopped
125 g mushrooms -- 4oz roughly chopped
1/4 cup sour cream

Beat eggs, cream and pepper together with fork. Pour into well-greased pie plate, sprinkle with cheese, cook on HIGH 5 minutes.
Stand, covered, 3 minutes. Fold in half, serve with Mushroom Sauce.
Mushroom Sauce: Combine butter, shallots and mushrooms in small dish, cook on HIGH 1 1/2 minutes until mushrooms are just soft. Stir in sour cream, cook on HIGH I minute.
