CRAB OMELETE

4 eggs
1/2 tsp salt
1/4 tsp freshly ground black pepper
1 cup crab meat
salt and pepper -- for seasoning
1/2 tsp lemon juice
1 tsp sesame oil
3 scallion -- finely chopped
1 green chile -- finely chopped

Beat eggs slightly as for French omelets. Seaosn with salt and pepper. Season crab meat with salt and pepper to taste and add lemon juice. Grease a heavy skillet with oil and gently fry half the onions and chili for a minute or two. Pour in half the beaten eggs and cook until set and golden on the bottom, creamy on top. Meanwhile heat crab meat in a seperate pan. Spoon half the crab meat down the center of the omelet and fold over once. Slide on to a plat and serve hot. Repeat with remaining mixtrues to make a second omelet.
