COTTAGE CHEESE EGG CURRY

1/4 cup butter -- melted
1/4 cup soy protein Isolate -- or whey
1 tbsp curry powder
1 cup half and half
1 cup cottage cheese
4 eggs, hard-boiled -- quartered
1/4 tsp salt

Combine butter,isolate, and curry powder in heavy saucepan over moderate heat.
Add half and half gradually, stirring vigorously.
Continue to cook and stiruntil thickened.
Add salt and cottage cheese.
Stir until curds almost disappear. Serve over eggs.
Garnish with parsley.
