CHOPPED EGG APPETIZER

4 green onions
8 eggs -- hard-boiled
1/4 cup rendered chicken fat
Salt and freshly ground pepper to taste
Mince green onions, using all of the white and half the green.
Finely chop eggs and mix with minced onion. Set aside.
To render chicken fat, fry slowly in an ungreased pan.
Pour off the fat, let cool.
Mix fat with the egg and onion.
Season to taste and chill for 2 hours.
Serve on lettuce.
