CHEESE RAREBIT OMELET

2 tsp Dijon mustard
2 oz cheddar cheese -- 60gr sliced or Swis
1/2 fl oz unsalted butter -- 45gr
3 eggs
salt and pepper -- to taste

Spread the mustard on one side of the cheese slices. Melt the butter in a large heavy skillet over medium heat. Beat eggs and season to taste. Increase heat under the skillet, pour in eggs and tilt skillet to spread egg over the whole surface. Lay the cheese slices, mustard-side down, on the cooking eggs. When the cheese begins to melt, fold omelet in half with a spatula. Tip onto a heated plate.
