Amount Measure Ingredient -- Preparation Method

5 smoked herring
1 cup cream
1 cup butter
1/2 tsp salt and pepper

Skin and bone herrings, and pass through mincing machine.
Put butter on to melt, and when melted add cream and bring to the boil.
When boiling add herrings and boil three minutes, and beat till thick.
Put in small jars and pour melted butter on top. ( use clarified if available)
Cover with paper.
