1/3 cup finely chopped garlic
2 1/2 deciliters olive oil -- 7-8 oz
125 g butter -- 4 oz
10 finely chopped anchovy fillets
1/2 tsp dried oregano -- or 1 1/2 tsp fresh
1/4 tsp dried basil -- or 3/4 fresh
salt & ground black pepper to taste
For dipping: grilled or raw veggies, cut into sticks/bite-sized pieces meats, cut into bite-sized pieces & fried or barbecued/grilled...
Heat the garlic, olive oil, butter and anchovies over a LOW heat, stirring until the butter melts. Simmer for 4 minutes. Add the seasonings, and stir.
Transfer mixture to a warm serving bowl, or fondue pot. Fondue pot is best. Serve with the various dippers, plenty of napkins and cocktail sticks.
