Dessert Cheesecake Baked


Amount Measure Ingredient -- Preparation Method

1/2 cup splenda
1/2 cup butter -- softened
1 cup ground almonds
1/2 cup Atkins Bake Mix
Filling
8 oz cream cheese -- 454gr softened
1/2 cup splenda
1/2 tsp almond extract
1 lg egg
Raspberry Swirl
1/2 cup raspberries, frozen -- or frozen*
2 tbsp splenda -- or to taste
1/4 tsp guar gum
1 tsp lemon juice
1 tbsp water

-Oven- 350°F-180°C *F
-Spray a 11"x 7" square pan with Pam.
-Cookie Crust:
-In a large bowl combine the splenda &butter, blend well.
-Lightly spoon the ground almonds &bake mix into measuring cup, level off.
-Add almond/mix to the butter mixture, mix till well combined
-Press into the bottom of prepared pan.Dough is sticky so press with fingertips.
-Bake at 350°F-180°C *F , 15-18 minutes or until edges are a light golden brown.-
Filling:
-In a medium sized bowl, beat the filling ingredients until fluffy.
-Pour filling over the baked crust.
-Spoon the topping in small dollops over filling.
-Gently swirl the topping into the batter being careful not to disturb the crust.
-Return pan to oven; bake an additional 15 to 20 minutes or until filling is set.
-Cool 30 minutes.
-Cut into bars &store in the fridge.
-18 bars @ 5.6 minus 1 gr. fiber= 4.6 carbs
-PLAIN BARS-NO FRUIT SWIRL:
-12 bars @ 5.5 minus 1 gr. fiber= 4.5 carbs each

To prepare Rasberry Swirl:
-In a small pot, over medium high heat, add the raspberries, splenda, water &lemon juice.Bring to a boil.
-Stir in the guar gum, cook until thickened.If too thick, thin with a drop or 2 of water.
-To make the "swirl" smooth, put thru a sieve to remove the seeds.
-*Any type of berry could be used in this but adjust carb count for the fruit.
