1/4 cup chunky peanut butter
1 1/2 pints heavy whipping cream -- 855ml
1/4 cup pecans -- chopped
1 tsp vanilla
1 cup splenda -- to taste
1 tbsp soy flour
1/2 tsp baking powder
1/4 tsp nutmeg
cooking spray
1/2 lb cream cheese -- 250gr
1 jell-o sugar free pudding -- pistachio flavored
1 cup water
CRUST: Mix: 1/4 cup chunky peanut butter, 3/8 cup heavy cream, 1/4 cup chopped pecans, 1 tsp. vanilla, 2 tbsp sugar substitute, 1 tbl. soy flour, 1/2 tsp. baking powder, and 1/4 tsp. nutmeg or cinnamon (optional).
Preheat oven to 375°F-190°C. Spray a 2"- 50mm deep square 8" x 8" -200-200mm pan with Pam or oil substitute. Spread dough in the bottom of the pan. Bake for about ten minutes. Let cool.
LAYER ONE: Soften and cream 8 oz -250g cream cheese with 1/4 cup eqivalent sugar substitute. Whip 1 cup heavy whipping cream while adding 1/4 cup eqivalent sugar substitute. Cream both sweetened cheese and whipped cream together, then spread this layer on the crust. Chill.
LAYER TWO: Pour 3/4 cup heavy cream and 1 cup water into a medium mixing bowl. Add pudding mix and beat mixture on low speed or with wire wisk.
Pour at once on top of first layer. Chill until firm
LAYER THREE: Whip 1 cup heavy cream while adding 1/4 cup eqivalent sugar substitute. Add on top of chilled pudding layer. Keep refrigerated.
