3 egg whites
1/4 tsp cream of tartar
3/4 cup splenda
1/2 tsp vanilla extract
Place egg whites and cream of tartar in a bowl, beat with electric mixer on high speed, until mixture is frothy.
Add splenda, 1 tablespoon at a time, beating well after each addition, until splenda is dissolved.
Continue beating until egg whites are glossy and stand in stiff peaks, about 10-12 minutes.
Beat in vanilla.
Grease a 23 cm (9”) pie plate, add mixture and spread with the back of a spoon, making a high wide edge.
Cook in a 250°F-125°C oven for 1 1/2 hours.
Turn off heat, but leave meringue in the oven, overnight, to dry completely.
Fill with ice cream or custard filling and serve.
