LEMON POPPYSEED CHEESE CURDS

2 pkg cream cheese -- softened
2 eggs
2 tbsp cream
1/2 cup Splenda
1 tsp fresh lemon juice
and a pinch of zest (here
I added a LOT more zest -
I love a lemony taste)
2 tsp poppy seeds
Mix eggs, Splenda cream and lemon juice and zest in a food processor.
Gradually add cream cheese and blend until smooth.
Add poppy seeds and spoon into medium size muffin tins.
Bake at 180°F- 90°C for 20 mins.
Test for doneness with a skewer, there should be no liquid on the surface of the skewer.
