1 cup Chopped almonds -- lightly toasted
CHEESECAKE
1/2 lb Feta Cheese -- 250gr
1/2 lb Ricotta Cheese -- 250gr
1/2 lb Swiss Cheese -- 250gr finely grated
2 tbsp Honey
5 Eggs -- lg
TOPPING
2 tbsp Honey
1 tsp Cinnamon -- Ground

Preheat the oven to 325°F-160°C. Press the feta and ricotta cheese through a sieve. In a large mixing bowl, beat together the cheeses and honey until smooth. Add the eggs, one at a time, beating well after each addition.
Invert bottom tray of springform pan. This allows cheesecake to slide off tray. Prepare with non stick spray. Spread roasted almonds on bottom of tray. Pour the mixture into the pan. Prepare the topping.
Drizzle the honey over the cake, then dust with the cinnamon. Bake the cake for about 55 minutes, or until set. Cool to room temperature, then chill.
