1 cup almond meal
125 g butter -- 4oz melted
1/2 kg cream cheese -- 1lb
2 eggs
3/4 cup splenda
2 drops vanilla extract

Combine Almond Meal/Flour with butter and press into the bottom of a 9" 230mm springform pan.
Shape to sides and bake in a moderate oven for 10-12 minutes.
Put the cream cheese, eggs, splenda, and vanilla in a mixing bowl and leave until all ingredients are at room temperature.
Beat well with an electric mixer for at least 15 minutes, increasing the speed to high for the last few minutes to make the mixture soft and spongy.
Pour into the crust and cook for 30 to 35 minutes in a slow oven. Turn off the heat and allow the cake to cool in the oven.
Variation
Citrus Cheesecake:Add 1/4 cup of orange juice, 1/4 cup of lemon juice, and the grated rind of half an orange to the cheese filling.
Serve with a Spatlese white wine.
