SWEET CINNAMON SOY BALLS

1/2 cup butter -- sofened
1/2 cup soybean flour -- sifted
1/2 cup all-purpose flour
1 cup splenda
1 egg
1/2 tsp vanilla
1/4 tsp baking soda
1/2 tsp baking powder
1/2 cup wheat flour, whole-grain
COATING:
2 tbsp sugar
1 tsp cinnamon

Mix butter on high speed for 30 seconds. Add soy flour, all-purpose flour, 1 cup splenda, egg, vanilla, baking soda and baking powder. Beat together. Beat in the whole wheat flour. Chill dough for 1 hour. Shape into 1" - 25mm balls. Roll the balls in sugar/cinnamon mixture and place on a greased sheet. Bake in 375°F-190° Cover for 10 minutes. Cool on a wire rack. Yield: 40.
