HAZELNUT TRUFFLE BITES

Amount Measure Ingredient -- Preparation Method

Crust
1/4 cup butter -- softened
1 lg egg
1 tsp vanilla
1/4 cup Atkins Bake Mix
1/2 cup ground hazelnuts
1/4 cup splenda
Truffle Filling
1/2 cup cream
2 oz unsweetened baking chocolate squares -- 60gr
1 1/2 tsp vanilla extract -- 0 carbs
1/4 cup splenda

-Preheat oven to 350°F-180°C
-Prepare the mini candy{muffin}tins.Line with candy papers or spray with non stick spray.I
even spritz a liitle non stick spray into the paper liner.Set aside.
CRUST:
-In a medium size bowl add the softened butter, egg, hazelnut syrup and splenda;
beat well.
-Add the bake mix and ground almonds; mix well.{All ground almonds could be used}
-Add a small spoonful of the crust batter into each prepared mini cup.
-Bake at 350°F-180°C for 10 minutes or until a light golden brown.
-Repeat until all crust mix is used up.
-Cool.
HAZELNUT TRUFFLE FILLING:
-In a small saucepan, add the cream and butter.Place over low heat and bring to a
slow simmer.
-Remove from heat and stir in choclate{*if using the squares, chop or grate for
easier melting.}
-Stir in the hazelnut syrup{or flavoring of choice} and the splenda; mix well to
dissolve splenda.
-Cool for 15 minutes then beat until smooth and somewhat fluffy.
-Chill in the fridge until thickened but still spoonable.{Like very thick
pudding}
-Top each pastry cup with a spoon of the truffle filling.
-Place in fridge until set.
-Store in a covered container in the fridge.May also be frozen.

Each one to hold the filling better.I use the rounded end of a wooden lemon
reamer.
