CHOCOLATE MINT KISSES

30 g unsweetened baking chocolate -- 1 oz
5 egg whites
3/4 cup Splenda
1 tsp vanilla extract
1/4 tsp peppermint extract
1 tbsp unsweetened cocoa powder
nonstick cooking spray

Preheat oven to 300°F-150°C
Beat egg white, till soft peaks.
Spray cookie sheets with nonstick spray, and sprinkle with cocoa powder.
Melt the chocolate in the microwave, or in the top of a double boiler; let it cool.
Beat egg whites until soft peaks form. Add the Splenda, a little at a time, and beat until stiff and shiny. Use a METAL spoon, and gently fold in the rest of the cocoa, the melted chocolate and the extracts, until completely combined.
Drop onto cookie sheets in heaped teaspoonfuls about an inch 25mm apart. Bake for 40 minutes. Remove and place on rack to cool completely.
