CHOCOLATE HAZELNUT TRUFFLES

9 oz unsweetened chocolate -- 270g grated or
chopped
3/4 cup butter
1 cup splenda -- sieved
1/4 cup heavy cream
1/2 cup hazelnuts -- finely chopped
1/4 cup semisweet chocolate -- grated for coating

1/8 cup splenda -- sieved
1/8 Tbsp unsweetened cocoa

COCOA splenda
In a small bowl, combine the splenda and cocoa.

TRUFFLES
Melt the chocolate and butter over water, stirring until smooth.
Remove from heat and stir in the powdered splenda, cream, and hazelnuts.
Blend thoroughly but gently.
Cover and let stand at room temperature for 12 - 14 hours, without stirring.

Using a teaspoon or melon baller, scoop up the mixture and roll it into 1" - 25mm balls.
Roll half the balls in the grated chocolate and half of the balls in the cocoa splenda until well coated.

Place on waxed paper lined baking sheet and chill 1 hour or until firm.
