CHOCOLATE GANACHE

50 g unsweetened baking chocolate -- 1 1/2 oz
1 cup cream -- 285ml
Sweetener to taste
1 tsp vanilla
Any other flavouring to taste
such as 1/4tsp Orange oil
Rum or Other extract. Optional
Melt Choc in Double boiler add cream and mix.
Allow to cool to room temp. Add Everything else, and then whip the mixture with an electric mixer. It will go light and flfy, but not as much as whipped cream on its own will do.
Either drop by teaspoons onto a cocoa dusted Piece of parchment, then dust and Refridgerate to make truffles, or stick the bowl straight in the fridge.
The mix will harden up nicely. Either keep refridgerated or freeze in portions.
I made this with Unsweetened Choc for a count of 10g. 75% will put it up around the 20g mark, depending on your Chocolate!
