CHOCOLATE COVERED BUTTER CREMES

4 oz cream cheese -- 125gr
1 1/2 tbsp heavy cream
1 1/2 tsp vanilla extract
1 cup splenda
4 oz unsweetened chocolate -- 125g dark
Place cream cheese, cream, and vanilla in a mixing bowl and beat until smooth. Gradually beat in sugar subsitute. Drop small spoonfuls of mixture onto aluminum foil. Break chocolate bars into several pieces, place in a bowl and melt in the microwave. Spoon melted chocolate over butter crèmes and let cool.
Variations:
MAPLE: Try adding 1/2 teaspoon of Mapeline maple flavoring. I usually make a double recipe and take out half the mixture then add the Mapeline and some more sugar substitute to taste.
COCONUT: Prepare the recipe as directed, and instead of using Ross Chocolates Dark Delight, use the Coconut Delight sugar free chocolate. Yes, it is sugar free but it does have real coconut, so watch your carbs.
Notes: This is a very versatile recipe. I like my butter crèmes a little on the "melt in my mouth" fluffy side, but you can cut back on the cream, and the cream cheese until you get the consistency you prefer. You can also substitute low-fat milk, half and half, skim... for the cream.
On the sugar substitute- I found that Splenda granular works very well for this recipe On the chocolate- you can get 5 different flavors of Ross Chocolates sugar free chocolate bars from RossChocolates.com or LowCarbChocolates.com (Dark, Milk, Coconut, Almond, Peanut) I usually make this recipe with the Dark chocolate because it is so low carb (1 carb per bar), but it is also heavenly with the Coconut chocolate bar. All the chocolates melt beautifully and are easy to work with. Watch the carb count with the Coconut and other chocolate bars
