3 tbsp butter
2 tbsp diced onion
1 cl minced garlic
2 tbsp diced green pepper
6 eggs
2 tbsp mild salsa -- no sugar
2 oz Monterey Jack cheese -- shredded
Melt butter in skilletsp Saute onions, garlic & pepper till soft. Beat eggs till light and pour in. Cook over very low heat stirring all the time. When eggs begin to set, add salsa. Continue to cook till done. Add cheese, stir in. Serve at once.
