DANISH CHEESE PASTRY

CRUST
4 oz cream cheese -- 125g
4 whole eggs
1/3 cup heavy cream
1/3 cup Parmesan cheese
1/4 cup Splenda
1 tsp cinnamon -- to taste
TOPPING
1 egg yolk
2 cups grated Cheddar cheese
1/4 tsp vanilla
4 oz cream cheese
1/4 cup Splenda
Preheat oven to 375°F-190°C.
Beat together the CRUST ingredients until smooth.
Spray 8x11" - 23x30cm pan with non stick spray.
Spread grated cheddar cheese evenly over the bottom of pan and gently pour batter over it.
Bake at 375°F-190°C for 20 minutes; then lower heat to 300°F-150°C
Mix the TOPPING ingredients and beat until smooth.
Gently spread topping over the crust.
Bake an additional 25 minutes at 300°F-150°C.
Allow to cool to room temperature.
