SPARKLING SUMMER LEMONADE

Amount Measure Ingredient -- Preparation Method

2 lg lemons -- sliced
2 lg lemons -- juice and rind
3/4 cup splenda
1 cup water
1 tbsp shredded fresh mint
1/2 cup lemon juice
1 1/2 qts cold sparkling mineral water -- 1 1/2 litres
ice cubes to serve

Thinly slice two lemons and place in a serving jug.
Peel the rind from the other two lemons.
Place the water and splenda in a large saucepan over a low heat until splenda dissolves.
Bring to the boil and add mint and simmer for 5 minutes.
Strain into the serving bowl. Add lemon juice and juice from the two lemons.

Add water and ice cubes; serve immediately or leave out the ice cubes and mineral water and chill for later use.
