PUMPERNICKEL BREAD...BREAD MACHINE

Amount Measure Ingredient -- Preparation Method

1 cup warm water -- baby bottle warm
3 tbsp olive oil -- +1 teaspoon. vinegar
1 lg egg -- beaten
1 1/4 cups dark rye flour
1/2 cup soy flour, lowfat
1/4 cup bran
1/2 cup gluten, wheat -- flour
1 tbsp cocoa
1 tsp instant coffee granules -- *see note
1 tbsp dry milk
1 tbsp splenda
1 tsp sugar -- for the yeast
2 1/4 tsp yeast -- bread machine

Pour the warm water into the bread pan of your machine.
Add the oil, beaten egg,vinegar, the dry ingredients in the order given, ending with the splenda, sugar{for the yeast},salt & then the yeast.
Program bread machine to the dough cycle but only do the MIX & ONE KNEAD..
Remove dough from pan, shape into a loaf, place in a well greased 8' - 23cm loaf pan.
Proof in a draft free place for an hour or so; until doubled in size.
Bake at 375°F-190°C for 25-30 minutes.Bread sounds hollow when lightly tapped on top & bottom.
Remove from pan & cool on a wire rack.
For ease in slicing, place in freezer for about an hour.
*In place of the instant coffee & water use 1 cup of strong coffee or omit the coffee & just use water.
