HOT DOG OR HAMBURGER BUNS

1 cup gluten, wheat -- flour
1 cup wheat bran
1 cup soy protein isolate
1 pkg yeast
1 tsp sugar
guar gum 1 tbsp
helps with texture, but can leave out if
you don't have it)
3 tbsp olive oil
2 tsp salt -- to taste
1 3/4 cups water -- "baby bottle"
temperature/lukewarm (1 3/4 to 2)

Dissolve sugar and yeast into 1 3/4 c water and stir; let sit about 5 minutes.
Add all other ingredients to bread machine (or mixing bowl, if mixing by hand); set bread machine to "manual" or "knead only". Add water/yeast mixture and start mixing. If it appears too dry, add the other 1/4 c water, or more if it's still too dry. It should form a smooth, elastic ball but not be sticky wet. Knead for about 10 minutes, or let your bread machine knead per its usual
cycle.
After kneading, divide dough into 8-10 balls and roll into whatever bun shape you want. Let rise in a warm place for 1 1/2- 2 hours (they will rise but won't quite double in size.) Bake at 400°F-200°C for about 25 minutes. Let cool and split the buns. They freeze well. Approx. 4.5 carbs each for 8 buns or 3.6 for 10 buns.
