FAKE FRENCH TOAST

Amount Measure Ingredient -- Preparation Method

1 egg
2 tbsp ricotta cheese -- + maybe a little
more.
1 tsp vanilla
1 dash cinnamon
1 dash nutmeg
2 tsp splenda
1 dash salt
1 tbsp atkins bake mix

Mix all together and pour into a heated well greased small 5 to 7 inch 125-175mm fry pan. COVER pan. let cook for a few minutes on med heat and when set,flip, cover, and cook on other side . you can double the recipe , but cook each piece of toast separately in a small pan so that it gets thick like a piece of toast.

I made the original recipe and made the mistake of cooking it in a larger pan which made it come out like a thin pancake. this time I made the above in the small pan and added some bake mix and my husband really liked it. by covering the pan, it helps to puff it up.
