DARK BREAD (VARIATION ON GABI'S BREAD)

1 pkt yeast
1/2 cup gluten, wheat -- vital if possible
3/4 cup flour
2 tbsp unprocessed wheat bran
2 tbsp flax seed meal, Bob's Red Mill
1/2 tsp sugar
3/4 tbsp baking powder
1/2 tsp salt
1/2 tbsp Splenda
1/2 tbsp caraway seed
1/8 tsp fennel seeds
1/2 tbsp instant coffee powder
1 tbsp molasses
1 tbsp cider vinegar
1 egg
1 1/2 tbsp olive oil
1/2 cup warm water
1/4 oz unsweetened baking chocolate
This was my method:
First I put the yeast in the bottom of my bread maker.
Mix all dry ingredients and put in the bread maker.
Melt the chocolate with the olive oil in the microwave. Make sure it doesn't get too hot.
Into the bread maker put the chocolate, oil, and egg.
Now add the water making sure it's the right temp. I use 110 degrees.
Start the bread maker and let it go through the first kneading cycle.
Remove the dough and place it in a bowl sprayed with vegetable spray.
I place the bowl in the microwave with the door open just enough so that the light stays on. Let it rise for 45 minutes. Punch it down
and put it in a sprayed loaf pan. I use a Pyrex that measures 8.5 X 4.5 X 2.5 inches 210x110x65mm and let it rise for another 45 minutes.
Put in a preheated 375°F-190°C oven and bake for about 35 minutes.
I have a rival bread slicer and I get 16 slices per loaf.

Per Serving (excluding unknown items): 77 Calories; 2g Fat (26.0% calories from fat); 7g Protein; 8g Carbohydrate; 1g Dietary Fiber; 12mg Cholesterol; 195mg Sodium. Exchanges: 1/2 Grain(Starch); 1 Lean Meat; 0 Vegetable; 1/2 Fat; 0 Other Carbohydrates.
