1 tsp shortening
1/2 cup cornmeal
1/2 cup soy flour -- or bake mix
3/4 cup cream
1/4 cup buttermilk
2 tbsp shortening -- melted
1 sm egg -- slightly beaten
Place shortening into 6-inch - 15cm iron skillet.
Place skillet in oven set on 450°F-230°C .
Combine remaining ingredients in medium-size mixing bowl (batter will be thick).
Remove skillet from oven (shortening will be very hot).
Sprinkle skillet lightly with cornmeal.
Spoon half of cornbread mixture into skillet, and return to oven for 12-15 minutes until browned.
