CARBSENSE CINNAMON BREAD

2 eggs
1/2 cup heavy cream
1/3 cup oil
1/2 cup Splenda
1 cup Atkins Bake Mix -- or other bake mix
2 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp vanilla

(1)Mix bake mix, powder, soda, splenda and cinnamon. Set aside.
(2)In seperate bowl, beat eggs for 3 minutes. Add cream and beat another 2 minutes. Add oil.
(3) Add flour mix to egg mix. Mix well. Add vanilla.
(4) Place in greased loaf pan. Bake at 350°F-180°C for 25 minutes.

I used a regular sized loaf pan. The slices were smaller. You can try a small loaf pan and they will be bigger. I toast the bread and put on butter, peanut butter or cream cheese. Made a great quick breakfast. Carb count depends on what kind of bake mix you use.
