BREAD TYPE BARS

1/4 cup mayonnaise
1/2 tsp salt
1 tsp baking powder
4 lg eggs
1/2 cup soy protein isolate

2 tbsp splenda
2 tsp cinnamon

Stir mayonnaise with salt and baking powder, then beat in eggs one at a time until smooth.
Stir in soy powder, mixing just until lumps disappear, and spread evenly in greased 7x11" - 175x275mm pan.
Bake at350°F-175°C for about 10 minutes, until springy and lightly browned.
That's lots of fat, mostly from the mayonnaise, which makes the bread a little moister.
When bread is done, remove from oven and brush with 1 tbsp soft butter.
Sprinkle with cinnamaon splenda

Variation 1: Add 1 tsp garlic powder and 1 tsp herbs Italian seasoning, rosemary, whatever to batter.
Top with 4 oz grated mixed cheeses.
Adds about 4 gram carb to total recipe.
Variation 2: Add 1/4 chopped nuts to batter.
