3 egg yolk
3 tbsp cottage cheese
3 tbsp soy flour -- (powder)sifted
3 egg whites
1/4 tsp cream of tartar
1 pinch salt
Cover and blend 3 egg yolks and cottage cheese in blender at medium speed for 10 seconds. Scrape down sides of blender with rubber spatula. Add sifted soy powder, cover, and blend at high speed for 10 seconds or until completely blended. Beat egg whites, cream of tarter and salt until stiff peaks form. Carefully fold in half of egg yolk-cotta
Preheat oven to 300°F-150°C. Onto a few large Teflon-coated cookie sheets, spoon batter (using a Tablespoon) so that spoonsful barely touch. Bake 30 minutes or until light brown. Batter will run together. Cool and crumble into crumbs. Store in a covered container until ready to use. Yields: 2 cups or 20-30 tablespoons of crumbs
