2 1/3 cups warm water
7 g yeast -- 1/4oz
1 tbsp oil
1 tbsp sugar -- eaten by yeast
1 tsp guar gum
1 tsp lecithin
1 tsp baking powder
1/2 tsp ascorbic acid -- (vitamin c powder)
1 tsp salt
2/3 cup soy protein isolate
1/3 cup soy flour
1 2/3 cups gluten, wheat -- vital wheat gluten
1/2 cup oatmeal -- flour
1 tbsp buttermilk, dried
Makes around 20 normal slices,at 3g carbs a slice ... less for thinner slices of course.
Bread Machine Instructions:
I suggest the use of a normal baking cycle, along with a light to medium crust setting.
It seems to work best when the cycle consists of a total preparation time between 3 - 3 1/2 hours.
Note- it is very important to use water at the temperature specified.
Combine all the dry ingredients in a bowl, add half the packet of yeast to the flour mix.
Place salt and oil in the machine first, then add the flour mix.
Make a little well in the flour, add the rest of the yeast, add the sugar and pour the warm water in the well.
Watch dough mixing during first 5-10 minutes to insure that all ingredients combine to form round dough ball.
If some mix sticks to pan sides, scrape off so that it may be combined properly.
Depending on temperature etc you may want to add some more water if the dough seems a little dry .
it should be slightly sticky.
Once dough ball has formed, do not open machine cover again until after baking is complete.
Conventional Oven Baking Instructions:
Combine bread mix and 1 packet of yeast in a large bowl; stir well.
Add 2 cups of very warm water and 1 tablespoon of oil; stir to form soft dough KNEAD on wood board for 2 minutes; dough will be sticky.
Cover with kitchen towel and let rest for 10 minutes.
Knead dough for 10 minutes.
FORM into loaf to fit greased 8' x 4' - inch 200x100mm loaf pan.
Cover with damp kitchen cloth and let rise in warm draft-free place for 1 1/2 hours.
BAKE in 375°F-190°C oven for 25 to 30 minutes or until golden brown .
Remove from pan; cool on wire rack one hour before slicing.
