A BETTER TASTING PROTEIN BREAD

2 tbsp flax seeds -- ground
2 tbsp sesame seeds -- ground *if salted
do not add salt in recipe
1/2 cup Soy Protein Isolate
1/4 cup atkins bake mix
2 tsp baking powder
stevia liquid 1/2 tsp
4 lg eggs -- separate out yolks
1 dash cream of tartar
1/2 cup water
1/4 cup cream
2 tbsp olive oil

Preheat oven to 350°F-180°C and spray 1 large or 2 small bread loaf pans with cooking
spray.
Beat egg whites with cream of tartar until stiff.
Beat remaining ingredients until they form a thick batter.
Fold into egg white mixture as gently as possible.
Don't worry if it still has white streaks -just don't deflate the egg whites too much.
Pour into loaf pan(s) and bake for approx 30 minutes or until it tests done with a
toothpick and the sides of the bread are pulled away from the pan.
Cool at least 10 minutes before slicing.
